Mushroom BBQ Sandwich with a Broccoli Slaw

Veggie burgers and veggie sandwiches at restaurants are either hits or misses. Burgers that involve black beans are usually good. The last veggie burger I had was as if they took a bag of frozen mixed veggies-the peas, corn, and cubed carrots- and squished it into a hockey puck. One time, I had a sandwich was just a portobello mushroom between warm-ish bread with a pickle.

Brown Sugar Oatmeal Muffins

What do you do when you’re excited? Do you scream in random outbursts? Do a little dance (and then slip because you are wearing socks on a hardwood floor)? Fidget non-stop?

I happen to do a combination of all of those. Apparently from a young age anyone could tell that I was excited because my hands wouldn’t stop shaking. But now I’ve also picked up the habit of yelling and singing when I’m excited (when I’m in my house), and becoming some sort of a Southern Christian preacher.

Pineapple Coconut Ice Cream (without an ice cream maker!)

I recently traveled to the Dominican Republic where I ate a lot of mango, absorbed a lot of seawater, got a lot of mosquito bites, and failed at trying to trick people into thinking that I spoke Spanish. One minute I’m asking this kid if he wants help making his toast, the next minute, I’m talking to his mom and the only thing I hear her say is “Soy….” then it’s just gibberish to me. Then I laugh along with her, I think she tells me to have a nice day (I hope), so I tell her likewise.

Toasted Coconut Waffles

Unlike pancakes, waffles don’t have to be drawn into memes or cartoon characters on a griddle to catch anyone’s attention. Waffles are art all on their own.Waffles are beautiful: crispy on the outside, fluffy on the inside, with pockets perfect for holding syrup, strawberries, or practically anything. (They’re like the pockets of men’s jeans. I’ve seen guys hold iPads in their pockets. I’m lucky if the pocket on my jeans can hold a chap stick.)

Copycat Chipotle Chicken Burrito Bowls

Everyone loves Chipotle. At least everyone in the Tri State Area does. If you google things to do in New Jersey, the first thing that comes up is the Jersey Shore-the Atlantic looks beautiful and blue until you step in in and get tangled in kelp-y sludge. There’s also an aquarium with hippos.

So I can see how double scoops of marinated meat and legitimately seasoned food is very exciting over here.
